Scampi are magical sea creatures much like unicorns. They also add a magical touch to a bowl of miso soup. A luxurious starter to get your tastebuds firing.


Miso Soup With Scampi

Serves: 4
Preparation time: 15 minutes
Cooking time: 8 minutes




  • Bring dashi stock to a simmer
  • Wash scampi thoroughly in fresh water
  • Cook scampi in dashi stock for 3 – 4 minutes depending on size
  • Take scampi out and put in cold water
  • Reserve dashi stock for soup
  • Skim any foam from the top of the dashi
  • Bring dashi to a simmer
  • Stir through white and red miso being careful not to boil
  • Remove underbelly section of the scampi using a pair of kitchen scissors and place one in each miso bowl
  • Strain the miso soup and divide evenly amongst four boils
  • Add sliced negi / shallots
  • Serve immediately

Chef’s Tips

  • Never let the miso soup boil
  • Buy scampi without any black colour in the head
  • The quality and flavour spectrum of the miso will largely determine the flavour, so buy the best miso you can afford.
